Olive Oil Cake

Preparation time: 15 minutes

Baking time: 50-60 minutes

Serves: 10



500 gr. self-raising flour

1 ½ cups sugar

¾ cup Olixandra’s extra virgin olive oil

1 ½ cups orange juice

1 tablespoon finely grated orange rind

1 tablespoon ground cinnamon and clove

1 teaspoon baking soda

½ cup coarsely chopped walnuts

½ cup cognac



Preheat oven to 170oC. Grease pan. Line base and sides with baking paper.


In saucepan warm extra virgin olive oil over medium heat. Beat flour, sugar, orange rind, cognac, heated olive oil, cinnamon, clove and walnuts in bowl with electric mixer. Dissolve baking soda in orange juice, taking care as the juice will start rising. Add to mixture and continue beating.  Pour mixture into prepared pan.


Bake cake for 50-60 minutes. Let cake cool down, remove from pan and dust with a little sifted icing sugar and cinnamon. Enjoy!
